    1. MissVranHalen I made a version of this for dinner tonight, & it was super tasty! I used a roasted sweet potato (drizzled with a bit of Wild Friends pumpkin spice peanut butter–so good!) & just cooked the quinoa with a bit of vegetable bouillon. I loved the pickled elements of the salad–kalamata olives, sweet cherry peppers, & marinated beets in mine–they give the salad so much flavor. I topped my salad with lemon juice & some sesame ginger miso dressing. Thanks for the inspiration!πŸ‘

    1. That’s awesome Lisa! My advice is to make sure you’re eating a lot, make sure you’re getting enough variety, and keep an eye on protein. You should have an abundance of whole plant foods on your plate with a nice balance of carbs, protein, and healthy fats πŸ™‚ It’s a bit of effort in the beginning to try to make sure you’re getting the nutrients you need but it quickly becomes second nature.   3. damn, awesome recipes but have you given any thought to how much salt you’re eating in a day? All that pickled stuff, the shoyu and you add salt to everything.

    1. Yes I know! I’m working on getting it down. I don’t use many condiments etc that have a lot of salt so I think I’m still getting less than I use to πŸ™‚ It’s a work in progress to find a good balance of the having enough salt to be healthy and too much lol

  9. so I have to say, I am not a vegan however I do like watching vegan videos as I am always trying to add more fruit and veg to my diet. what makes you different and that I like, is that you talk about all of the health benefits of what you are eating. I feel like some vegans get on a high horse and lose sight of the basics of plant based eating. who knows maybe I will be vegan someday but in the meantime I just wanted to let you know I really enjoy your videos πŸ™‚ and I hope more and more people will discover you. keep it up!

A lot of my friends and family members are not vegan but they like eating vegan food. I think that’s great! I honestly hope more non vegans will be as open minded as you are about it because vegan food can be really good!     2. It’s kiiiiiind like rice but since it’s much smaller it has a totally different consistency. It’s really good if it’s cooked right and well seasoned πŸ™‚ Plus it’s really good for you. Try it and let me know what you think!
