Just a drizzle of oil? When you get this at Thai places, it seems rather oily so when I make it at home, I’ve added close to a cup and it’s similar. Is your method not as “fried” tasting?

I see a lot of comments below about having difficulty finding “smoked” tofu, but he actually specifies FRIED tofu – a very different taste & easy to find in Asian grocery stores. 🙋
Omg you boil the noodles ? You’ll end with mush . Nooooo. You soak rice sticks into cold water for a few minjust to soften it up, then stir fry it thank you very much. I haven’t bother to even look at the rest of your instructions, because you’ve managed to botched MY country’s traditional dish from the first step.
Sauce ? I wouldn’t even go there.
Do you mind sharing the brand of tamarind paste, is it available on Amazon USA?
The Indian grocery stores here in CA carry the tamarind concentrate not the paste.
