  4. Just a drizzle of oil? When you get this at Thai places, it seems rather oily so when I make it at home, I’ve added close to a cup and it’s similar. Is your method not as “fried” tasting?

  8. I see a lot of comments below about having difficulty finding “smoked” tofu, but he actually specifies FRIED tofu – a very different taste & easy to find in Asian grocery stores. 🙋

  9. Omg you boil the noodles ? You’ll end with mush . Nooooo. You soak rice sticks into cold water for a few minjust to soften it up, then stir fry it thank you very much. I haven’t bother to even look at the rest of your instructions, because you’ve managed to botched MY country’s traditional dish from the first step.
    Sauce ? I wouldn’t even go there.

    The Indian grocery stores here in CA carry the tamarind concentrate not the paste.
